Brad's dad makes these burritos for us when we come visit. They'll work with any type of shredded meat--leftover pot roast, chicken, pork.
Dad's Burritos
Burrito-size tortillas
1 cup sour cream
1 can refried beans
1 cup salsa
3-4 cups shredded meat
1 cup shredded cheese
1 cup sour cream
1 can green chili sauce
shredded lettuce
chopped tomato
Heat meat in pan on stove top and combine with salsa. In a separate pan, heat beans until warmed through.
Spread a spoonful of sour cream onto the tortilla. Top with a spoonful of refried beans. Add shredded meat and a sprinkle of cheese. Fold sides in, then roll from the bottom to the top. Place seam side down in baking dish. Repeat until dish is full. Top entire pan with all the green chili sauce. Top with shredded cheese.
Bake at 300 for 25-30 minutes, or until hot and bubbly. Serve with lettuce, tomato, and sour cream.
