I love, love this dessert. It looks fancy and it's crazy simple to make. The flavors taste just like a chocolate eclair--but without all the work!
Chocolate Eclair Dessert
3-4 packages graham crackers
2 small boxes instant vanilla pudding
3 cups milk
8 oz cool whip
Frosting:
1 1/2 cups powdered sugar
1/4 cup cocoa
2 Tbsp melted butter
2 Tbsp hot milk
1 tsp vanilla
Mix pudding with milk until smooth. Fold in cool whip. In a 9x13 pan, lay out graham crackers to cover the bottom. Pour 1/2 pudding mixture over top and spread. Add another layer of graham crackers, then pudding, and top with a third layer of graham crackers.
Spread the chocolate frosting over top (it will be a pretty thin layer--see picture). Refrigerate for at least 4 hours or overnight.
